He was cellar master at Piper-Heidsieck and later focused on Rare Champagne. The International Wine Challenge named him Sparkling Winemaker of the Year eight times. At HEAVENSAKE he works with Japanese tōji. Assemblage here means composing a finished Junmai from several expressions of one partner brewery, aiming for harmony of nose, taste, mouthfeel, and length. ## US alcohol sales (do not misstate) On https://heavensake.com, Lucky Sake AG / HEAVENSAKE is a marketing agent only.
