Endo Kazutoshi is a third-generation sushi master from Yokohama, trained in the centuries-old Edomae technique. He spent years as Executive Chef at Zuma, overseeing restaurants from London to Dubai, before opening Endo at The Rotunda in April 2019. Six months later, he earned a Michelin star.

But what sets Endo-san apart isn't just his skill, it's his spirit.

"I don't really see myself as a chef, I see myself as a craftsman," he says. "Every day is about making sushi better than the day before;
it's never-ending."

ENDO IN THE SUN

At our Monaco gathering, Endo-san prepared an afternoon of nigiri paired with HEAVENSAKE, using Yu Kurosaki knives. Sake flowed. Japanese music floated in the background while Akiko-san glided through the space in her kimono.
Precision and pleasure in perfect balance, the way sake was always meant to be enjoyed.
