Does Sake Go Bad After Opening?
Freshness, refrigeration and how long to keep an open bottle.
Yes, sake can deteriorate after opening, but fading freshness and spoilage are different things. Fruit aromas may weaken and the flavor may become less lively before obvious off odors develop. Close the bottle tightly, keep it upright in the fridge and follow its own opened-bottle guidance. The freshness periods below describe expected quality, not a guarantee of safety.
what changes after opening?
Temperature, light and oxygen affect sake’s condition. The National Research Institute of Brewing’s storage guide explains that warmth can diminish fruit and floral aromas, while prolonged storage can bring stale, burnt or sulfurous odors.
The same guide recommends a tight seal and upright storage after opening. Standing the bottle upright reduces the surface exposed to oxygen. Refrigeration slows the changes that dull the sake’s aroma and flavor.
does sake need to be refrigerated after opening?
Yes. After opening, close the bottle tightly and keep it upright in the fridge. Refrigeration helps preserve the aromas and freshness you opened it for.

Note the day you open the bottle. These recommendations belong to the named releases and their storage conditions; they do not promise that a bottle kept warm or left open will retain its character for the same period. Another sake may have different guidance, so keep its own label or maker’s instructions to hand.
does sake have an expiration date?
There is no single freshness period that applies to every sake. An unopened bottle and an opened one also need different guidance. Check what any printed date describes: a bottling date tells you when the sake was bottled, rather than how long it has been open.
Follow the maker’s instructions for the unopened bottle, including its storage conditions. Once you open it, record that date separately and follow the opened-bottle recommendation. The four-week and two-week periods above begin when the bottle is opened.
how should you serve a refrigerated bottle?
For our US LABEL AZUR with Dewazakura, the serving recommendation is 45 to 50°F (7 to 10°C), in a white wine glass. Serving temperature describes the sake when you pour it. Between occasions, keep the closed bottle upright in the fridge.
Our wine-glass article explains the serve. When you have finished pouring, close the bottle and return it to the fridge.
